Strawberry Cobb Salad with Tangy Poppyseed Dressing

4 cups baby spinach

10 large strawberries, stems removed and sliced

CHICKEN

1 avocado, chopped

Dressing 

1 lemon, juiced (approximately 3 tbls)

Zest of 1 lemon

1/4 cup red wine vinegar

1/2 cup olive oil

1/4 red onion, minced

1 tbls dijon mustard

1 tsp poppy seeds
